Southern Oregon (Medford/Ashland) | 8a–9a | Late October → Mid-November |
Central Oregon (Bend/Redmond) | 5b–6b | Early October → Mid-October |
Eastern Oregon (La Grande/Ontario) | 4b–6a | Late September → Early October |
High elevations | 4b–5a | Use extra mulch + frost protection |
👉 The goal: Plant 2–4 weeks before the ground freezes👉 Soil temperature target: 50–60°F at planting depth
🌦 What to Expect Through the Seasons
Season | Garlic Growth Stage | Tips |
Fall | Roots grow underground | Add a layer of mulch |

Protect cloves from frost heaving
Help with spring moisture retention
Suppress early weeds
By March, the plants are eager to reach upward!
🧄 When Do You Harvest Garlic in Oregon?
Most Oregon garlic is harvested:
➡ Early to mid-July
Harvest indicators:
Lower 3–4 leaves turn brown
